Do the Monitoring LUTs bake into my footage?

Not necessarily, it’s for previewing/monitoring so you can judge exposure and color on set. If you don't plan to color grade your footage in post, you have the option to bake the LUT into your footage while shooting in the Blackmagic Camera app.
Do the Monitoring LUTs work with all iPhones?

The Monitoring LUTs are compatible with all iPhone models from the XS onward. Using it on iPhones capable of Apple Log or Apple Log 2 is recommended for the best results.
